Practicing organic. 100% Chardonnay. From the village of Bissy-Sous-Cruchaud, just outside of Buxy (Montagny). Clay and limestone terroir; Ostrea means oysters, which are resembled by the limestone stones in the vineyards. Vineyards are isolated, surrounded by forest, meaning an organic farming oasis. 25+ year old vines.
